  1. Sweet Potato Noodles with Cashew Sauce

Ingredients:

1 cup cashew nuts

1 clove garlic

3/4 cup water

1 tablespoon oil

2 sweet potatoes, spiralized

Handful of fresh herbs like chives and basil

Salt and pepper to taste

Olive oil

Preparation:

  • Soak cashews in water and set aside for two hours
  • Drain and rinse
  • Blend in a food processor with water, garlic and salt until smooth and creamy
  • Heat oil in a skillet and toss the spiralized sweet potato noodles for about six minutes until they are crispy on the top and soft inside
  • Add the cashew sauce and half the herbs and mix well using tongs
  • Season with salt and pepper and garnish with the remaining herbs
  1. Cabbage Spirals with Almonds and Tuna

Ingredients:

2 cloves garlic, minced

1/2 cup spiralized red onion

1 head spiralized cabbage

1/3 cup chicken broth

2 cans tuna chunks in brine

2 tablespoons sliced almonds

Olive oil

Red pepper flakes

Preparation:

  • Heat a skillet over medium heat and pour in some olive oil
  • Sauté minced garlic cloves and red pepper flakes for 30 seconds
  • Add spiralized onions and cook for two minutes
  • Add spiralized cabbaged and toss for further two minutes
  • Add chicken broth and lower the heat until the broth reduces completely
  • Add tuna chunks and mix well with tongs
  • Heat another minute and serve in bowls
  • Garnish liberally with sliced almonds
  1. Tri-Color Carrot Salad

Ingredients:

3 spiralized carrots, one red, one orange and one yellow

1 spiralized zucchini, medium-sized

1/4 cup fresh basil, chopped into ribbons

1 can chickpeas

1/2 teaspoon cumin

Red chili flakes to taste

Salt and pepper to taste

Preparation

  • Rinse and wash the canned chickpeas thoroughly
  • Allow the chickpeas to drain and then dry thoroughly with paper towels
  • Preheat the oven to 400 deg Fahrenheit
  • Toss the chickpeas in olive oil, cumin and red chili flakes
  • Arrange the chickpeas on a baking tray in a single layer
  • Roast for about 30 minutes, until golden brown
  • Squeeze excess moisture from the zucchini
  • Place spiralized veggies in a salad bowl with chopped basil, salt and pepper
  • Combine the roasted chickpeas and toss again
  • Drizzle olive oil and serve immediately
  1. Arugula with Grapes and Pickled Onions

Ingredients:

3 cups fresh arugula

2-1/2 cups red Californian grapes

1 clove garlic, crushed

1/4 cup spiralized pickled onions

Olive oil

Salt and pepper to taste

Chopped cashews for garnishing

Preparation:

  • Halve the grapes and add into the salad bowl with arugula
  • Add the spiralized pickled onions
  • Add crushed garlic, olive oil, salt and pepper
  • Toss well
  • Sprinkle chopped cashews liberally
  • Serve immediately
  1. Homemade Apple and Cabbage Slaw

Ingredients:

2 cups shredded green cabbage

2 cups shredded red cabbage

1 large spiralized red apple

2 tablespoon balsamic vinegar

2 tablespoon olive oil

1 teaspoon honey

Freshly ground black pepper

Salt to taste

Handful of grated cheese

Basil leaves

Preparation:

  • Add honey, olive oil, salt, pepper and whisk briskly to combine and set aside
  • Cut the apple noodles with kitchen scissors into smaller, six-inch pieces
  • Add the apple noodles to a mixture of shredded red and green cabbage. You can spiralize the cabbage if you like
  • Toss well to combine the cabbage and apple noodle
  • Drizzle the honey and olive oil dressing
  • Toss to spread the dressing
  • Garnish with some grated cheese and basil leaves
